Your needs, this model
Does it fit your priorities?
Could the BOV680 fit a strict 16-inch body-width limit while staying in the compact-width group?
The selected US BOV680 listing measures 15.7 inches wide and includes an Air Fry function; the manual requires additional operating clearance around the body.
Explore this need in the finder →On a 16-inch counter, can the BOV680 offer Air Fry without an app-connected oven-control requirement?
Yes. Its Air Fry and related task presets are selected from the oven’s dials. The manual says the appliance is not intended for a separate remote-control system. Breville+ recipe material is not remote oven control.
Explore this need in the finder →Does the BOV680 meet a requirement for a dedicated Dehydrate preset?
No. The BOV680 page and manual list ten functions, including five air-fry programs, but no Dehydrate function. The BOV900 or BOV950 Pro models document a dehydrate cycle.
Explore this need in the finder →Does the current BOV680 US page establish a manufacturer-stated cubic-foot cavity capacity of at least 0.5 cu ft?
No cubic-foot figure is stated for BOV680 in the official product information reviewed. Its published width, four-slice toast and 11-inch pizza references cannot be converted into cavity volume, so a required numerical capacity threshold remains unconfirmed.
Explore this need in the finder →Breville’s Smart Oven Air Fryer Compact BOV680 is the narrowest-body appliance in the Air Fryer group reviewed here. Its current US page lists a 15.7-inch-wide body, four-slice toast capacity, 11-inch pizza and a four-piece accessory set. It does not publish a cubic-foot capacity or weight in the product information reviewed, so the “Compact” name is not a substitute for those missing measurements. What Breville does specify is a set of five air-fry programs and five toaster-oven favorites for small household meals and snacks.
Ten programs, five aimed at air-frying
The product page describes five air-fry modes and five Smart Oven functions. The mode dial separates Air Fry, Frozen Fries, Wings, Bacon and Crispy Reheat from Toast, Bagel, Pizza, Broil and Bake & Roast. “Five air-fry modes” does not mean five baskets or five independent cooking chambers; it is a preset-focused control layout for a single countertop oven. A temperature/time dial, a Super Convection control and an A Bit More button provide adjustment and an additional-cook-time step. The manual’s program table shows that the dedicated Air Fry preset defaults to 400°F and 15 minutes, with Super Convection on, and permits a cycle of up to one hour. Other modes have their own program settings and limits.
Breville gives useful batch references: the oven can air-fry one pound of fries, cook an 11-inch pizza, toast four slices and roast a whole 4.5-pound chicken. Treat those as manufacturer capacity statements rather than evidence that every load cooks evenly at once. A full basket of fries, a large bird and four slices of toast are different tasks; match the setup to the chosen program and leave room for the appliance’s air movement. This format is best compared with the similarly named BOV860 by body dimensions and listed food capacity: the BOV860 is wider, but lists a 0.8-cubic-foot cavity, six-slice toast and 13-inch pizza. The BOV680 page gives no cubic-foot figure.
Body dimensions and required clearance
The BOV680 measures 15.7 inches wide, 16.9 deep and 10 high. That is a tighter body than the 18.9-inch BOV860 and far narrower than the 21.4-inch BOV900 and Joule BOV950. The manual adds a separate operating requirement: leave four inches at both sides and six inches above. It also says the oven is not suitable for a small appliance enclosure. Do not compare 15.7 inches with the open gap between cabinets and assume the fit is solved. Add air space, the plug, room for the drop-down door and a safe place to set down a hot rack or roasting pan.
The manual lists the electrical rating as 120 volts, 60 hertz and 1,800 watts and recommends a dedicated circuit. Keep cords clear of the hot housing, use a grounded outlet as instructed, and ask a qualified electrician if you are uncertain about the installation. The product page gives a brushed-stainless US listing under model code BOV680BSS1BUC1. Check the exact retailer model suffix and the accessory bundle if buying a particular finish.
Included pieces and a useful first-day routine
Breville lists a broiling rack, roasting pan, air-fry basket and reversible oven rack. The manual identifies the enamel roasting pan as about 10.55 by 10.55 inches, so do not assume the supplied pan is an 11-inch square; the 11-inch figure refers to the product’s pizza capacity. For air-frying wings or bacon, the manual provides an option to put the roasting pan underneath as a drip catcher. That adds a second piece to wash, but is better than allowing fat to collect below the basket. Confirm your own dish size against the chamber and rack arrangement rather than buying an accessory on the strength of the family name.
Before first use, the BOV680 book calls for an empty 12-minute run in a ventilated area to remove protective substances from the heating elements. The body, rack, roasting pan, crumb tray and basket need to cool fully before cleaning. The manual instructs the owner to unplug, remove the crumb tray, wash it with warm soapy water and dry it before reinserting; it also warns against foil on the tray, metal scouring pads and steam cleaning the oven. These instructions are more useful to daily ownership than a generic promise of effortless cleanup.
What the Compact does not replace
The BOV680’s official 10-function list includes no dedicated Dehydrate preset, and its manual says the oven is not intended for an external timer or separate remote-control system. Breville+ recipes and ingredient guides are available, but that is not the same as an oven that pairs for remote control. If drying food is essential, compare the BOV900 or Joule BOV950. If you need more stated oven capacity without stepping up to the large Pro body, compare the BOV860 and its 0.8-cubic-foot, six-slice specifications.
This is a manufacturer-document-based assessment, not a cooking test. It does not claim measured crispness, heating uniformity, preheat time, noise, or actual performance with a specific food load. Its strongest case is a smaller body with task-specific Air Fry programs and a 4-piece accessory set. Its main uncertainty is important for fit decisions: the current product page and manual reviewed here do not state cubic-foot capacity or appliance weight, so do not borrow those numbers from the BOV860 or a retailer selling another model.
