Air fry and dehydrate are different jobs

Air frying and dehydrating both move heated air through the oven, but they ask for opposite routines. Air frying aims for a crisp exterior in a relatively short, hotter cook; dehydrating holds a much lower temperature and airflow for a long drying cycle. One preset should not be treated as proof of the other.

Air Fry: high heat, open space, watch the load

The BOV680’s manual sets its Air Fry preset at 400°F by default and allows up to one hour; its product page separates five air-fry tasks from five oven favorites. The BOV860’s manual sets Air Fry around 425°F by default, uses Super Convection and allows a maximum two-hour timer. It directs the user to distribute food on the supplied air-fry basket, preferably in a single layer with space between pieces, at the recommended upper rack position. Breville advises using the broiling rack inside the roasting pan instead of the air-fry basket for fatty items such as chicken wings to catch dripping oil. That extra collection step is part of the setup, not a performance ranking.

Dehydrate: slow temperature and a long timer

The BOV900 manual describes the Dehydrate program as low, stable heat with maximized airflow. The preset begins at 125°F and permits a timer of up to 72 hours; the manufacturer describes using up to four trays on the BOV900. The BOV950 also lists a dehydrate function and supplies an air-fry/dehydrate basket, but its product page does not state a four-tray maximum. The BOV680 and BOV860 function lists have no Dehydrate preset.

Use the right model and accessory

Choose BOV900 or BOV950 if dehydrating is a genuine recurring need. The larger body may occupy far more space than the dried batch warrants, so compare your usual quantity with the published one-cubic-foot capacity and included rack setup. If you mainly want crisp frozen foods or wings in a narrower body, compare the BOV680’s five air-fry modes and compact accessory set with the BOV860’s broader 0.8-cubic-foot cavity. Its air-fry cycle does not turn it into a documented dehydrator.

Always follow the exact book for rack position, cleaning and food handling. Do not crowd a basket and assume a time from another model will transfer unchanged; air movement, load and the physical arrangement are part of the oven’s configuration.
